Recipe

I made lots of stuff today: Chocolate-chip Muffins, Hong Kong Egg Tarts & Mango Puddings! It's been so long since I last bake stuff due to the past final exams. My friends have been asking me to give them recipes for the above snacks, so I shall post the recipes here. =)

Choco-chip Muffins (Time needed: 30mins) (Quantity: 12 Big Muffins)

Ingredients:
475g Self-raising flour
150g sugar
160ml milk
125g butter
2eggs
2 teasp vanilla essence
300g chocolate chips
Optional ; chopped walnuts, cocoa powder

Directions:
1) Preheat oven to 204°C


2) Grease twelve muffin cups.


3) In a large bowl, stir together flour, sugar and cocoa powder. Then rub them with butter.


4) Add in milk, egg and vanilla and mix it well.


5) Stir in chocolate chips and nuts.


6) Use a spoon batter the mixture into prepared muffin cups.
7) Now bake for 15-20 minutes.



8) Remove muffin tin to wire rack.

Egg Tarts (Time needed: 1hr) (Quantity: 15-17 tarts)

Ingredients
Crust:
375g All-purpose flour
125g Sugar
225g Butter
1 Egg
1 teasp vanilla extract

Fillings:
135g Sugar
355ml Water
9 Eggs
1 teasp vanilla extract
235ml Milk

Directions:


1) Preheat the oven to 230°C.


2) In a medium bowl, mix together sugar and flour. Then, add in the egg and vanilla makes the mixture into a dough.

3) Press some dough into the tart molds so that it covers the bottom, and goes up higher than the sides.
4) Boil water and sugar until all sugar is dissolved and cool to room temperature.


5) Strain the eggs through a sieve, and whisk into the sugar mixture. Stir in the evaporated milk and vanilla. Strain the filling through a sieve, and fill the tart shells.

6) Bake for 15 to 20 minutes until golden brown, and the filling is puffed up a little bit.
